So good to have sister Wendy aboard for a week with her fabulous recipes! Here’s a keeper made at anchor at Encenada el Cardonal on Isla Partida—a small island about 25 n.m. north of La Paz (adjacent to Espiritu Santo.) The key to this super easy appetizer is fresh figs which Wendy found being sold at a street corner down on the malecón. Super quick and easy – one pan.
Appetizer Serves 2-4

2 slices of bacon chopped into small pieces ½” or less 8 small figs chopped into bite size pieces 2 oz. crumbled gorgonzola cheese Balsamic vinegar to taste Bread or crackers
- Sauté bacon until just starting to crisp.
- Turn off the heat and then add the figs and cheese to the pan. Stir until figs softened and just heated through.
- Dress with a good balsamic vinegar
- Serve warm (like a dip–we just left it in the pan) on bread or crackers
