Baking on Estelle is challenging. First and foremost there’s the tiny Force 10 propane-fueled oven to contend with. Before leaving Friday Harbor I stocked up on miniature baking items: tiny cookie sheets, mini pie pans, etc. and brought on board my copy of Baking for Two from the American Test Kitchen. Baking for two contains recipes for small sized baked items. I started with their recipe for chocolate chip cookies but they turned out a little more smooth and cakey than I like. Not sure if it was the oven or the melted butter called for in the recipe. (The batter was awful soft even after putting it in the boat fridge too chill.) Notes for next time: Soften but don’t melt the butter and see if the texture is better.
